Elbows knees and punches VS eye, throat, and groin strikes?
You can train and spar with punches kicks knees elbows and sometimes (with head gear) even head butts. So you can get very well practised at using these techniques and on top of that they are gross movements and target mostly large targets on the opponent so its more likely to land.

Vital point strikes to small weak points on the human body that can often do the most damage no matter how weak you are (e.g a girl can disable a big man with a simple eye gouge) but they are hard to train ie you cant spar with them and they are somewhat harder to hit when under adrenalin and the opponent is in motion.
So whats your best advice regarding when to use trainable sport style (muay thai boxing etc) strikes and when to use vital point strikes to small difficult hard to train areas e.g. eyes and throat from martial arts like Karate Wing Chun or Kali!?

So you're asking for advice in regards to when to use clean fighting and dirty fighting? Dirty fighting, in the terms you're putting it in, are moreso for defense whereas clean fighting is where you actually want to fight the other person. I don't promote dirty fighting because I think it's kind of weak to kick someone in the groin to get them on the ground and start pounding away at their face while they're defenseless.
