How do you change Convection oven recipe to household oven?
My recipe says to make --
FLEMING'S POTATOES Mark Trottier/Fleming's Restaurant
-- Spray sides and bottom of a 2-inch deep coated pan. Place potato mixture in pan and evenly distribute potatoes and sauce. Sprinkle with remaining cheese. Cover with plastic wrap and aluminum foil. Bake at 350° in convection oven on low fan for one hour. Remove foil and wrap and bake an additional 14 minutes or until browned
How can I convert this? (I know I can't use plastic wrap either)
I appreciate any cullinary chef / student's input!
1.) As stated in one of the answers,,, Convection heat IS NOT hotter than standard,,, 350 degrees is 350 degrees, whether there's a fan involved or not!
2.) All a convection oven does is blow the heat around, making the heat more even and forcing it into the product you are cooking,,, in turn,,, faster cooking.
When converting from convection to standard ovens,,, try adding about 10-15 minutes cook time. Raising the oven temp can cause uneven cooking and burning on the outside before the center reaches the proper temp.
